Well, the Cook with Me project has official begun! We started with just one recipe this month, Indonesian Chicken, and what a great start it was!
The Indonesian Chicken recipe is found on page 116 of the Whitewater Cooks with Passion book, and I chose this one as the recipe to kick off the project because the description mentions that it is something that you can throw together quickly and that the ingredients are something you probably already have in your fridge. Those statements were mostly true, for me anyway.
It was pretty quick to put together and I did have most of the ingredients. Most of them except for most of the things that give it its Indonesian flavour. No worries though - I love shopping for new ingredients and hope that you do too! I had to purchase Kecap Manis (sweet, thick soy sauce) and tamarind paste. I also should have bought Sambal Oelek (red chili paste) but I didn't read the information very well and mistook red curry paste with red chili paste!
Kecap Manis was quick to find, it was with the rest of the soy sauce at my local grocery store (and Sambal Oelek was right next to it as well). Tamarind Paste took longer to find at my local natural foods grocery store. I had a great time wandering around and then eventually had to ask someone to help me. That led to a fun conversation about what I was going to make.

Once I had everything assembled it was a quick recipe to put together and I love that, aside from the rice, everything gets cooked in the same pot. Less dishes for the win!! This recipe did make a lot, I used 6 boneless skinless chicken breasts and it made enough to feed the kid and I, plus left me enough leftovers for good sized lunches twice this week.
I did leave out the bean sprouts because I knew the kid wouldn't eat them. Cilantro, lime, and peanuts were all an amazing extra level of flavour, I made sure I took some to work with me too.

So far I know that there are three other people taking part in this Cook With Me project and Krista (a friend from waaaay back) sent me this amazing picture of her Indonesian Chicken - it looks amazing! She did mention that she might add a bit more spice to it next time.
